Sometimes, you need the warmth of a home-cooked casserole without the hour-long wait. This Mediterranean Farfalle & Bean Bake is our modern, pasta-focused twist on the classic. By swapping traditional grains for Pasta Zing Ready-to-Eat Farfalle, you get a perfectly al dente meal that’s rich in protein and fiber.
Whether you’re fueling up after a workout or looking for a kid-friendly vegetarian dinner, this "dump-and-heat" style bake is the answer.
Ingredients
- 2 pouches Pasta Zing Ready-to-Eat Farfalle
- 1 can (15 oz) Black-eyed peas or Cannellini beans, rinsed and drained
- 1 cup Marinara or roasted red pepper sauce
- 1/2 cup chopped bell peppers (red and green)
- 1/4 cup sliced black olives
- 1 tsp Smoked paprika
-
Garnish: Fresh parsley and a sprinkle of Parmesan or Vegan nutritional yeast.
Instructions
1. Prep the Pasta Zing
No boiling water required! Gently squeeze the Pasta Zing Farfalle pouches to separate the bow-tie noodles. Tear the notch to vent and microwave for 60–90 seconds.
2. Combine the Flavors
In a large microwave-safe bowl (or a skillet if you prefer the stovetop), mix the warm Farfalle with your beans, peppers, olives, and sauce. Stir in the smoked paprika for that signature "Hoppin' John" smoky depth.
3. The "Flash Bake."
Heat the mixture for another 2–3 minutes until the sauce is bubbly and the vegetables are slightly tender.
4. Serve & Enjoy
Plate the pasta and top with fresh parsley and cheese. For an extra crunch, you can add a handful of toasted breadcrumbs on top!
