Chunky Chicken & Savory Rice Roll

These chunky chicken and savory rice rolls are the ultimate handheld meal, perfect for a quick lunch or a satisfying weeknight dinner. By using Ready-to-Eat ingredients, you can have a restaurant-quality wrap on the table in minutes without the long prep time. For a burst of authentic flavor, we recommend using Eat Regal Spanish Rice to give the filling a perfectly seasoned, zesty base.

Ingredients

  • 2 cups cooked chicken breast, cut into large, chunky bites
  • 1 pouch (8.8 oz) eat regal spanish rice (Ready-to-Eat)
  • 4 large flour tortillas
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 1/2 red bell pepper, diced
  • 1 cup shredded Monterey Jack or Cheddar cheese
  • 1/2 cup black beans, drained and rinsed
  • Optional: Fresh cilantro, sour cream, and lime wedges for serving

Instructions

1. Sauté the Aromatics
Heat the oil in a large skillet over medium heat. Add the onion and red bell pepper, cooking for 3 to 5 minutes until softened and slightly browned.
2. Heat the Filling
Gently squeeze the Eat Regal Spanish Rice pouch to separate the grains, then tear it open and add the rice to the skillet. Stir in the chunky chicken bites and black beans. Cook for 3 to 5 minutes, stirring occasionally, until the savory Spanish flavors are well-combined.
3. Assemble the Rolls
Lay the tortillas flat on a clean surface. Divide the warm chicken and rice mixture evenly among the centers of the tortillas and top each with a generous sprinkle of shredded cheese.
4. Roll and Secure
Fold in the sides of each tortilla, then roll up tightly from the bottom to enclose the filling.
5. The "Optional Crisp"
For a golden finish, wipe the skillet clean and return the rolls to the pan over medium heat. Toast for 1 to 2 minutes per side until the tortilla is crispy and the cheese is melted!
