The foundation of this salad is our Eat Regal Whole Grain Brown Rice. Ingredients

1 can (15 oz) black beans, rinsed and drained
4 cups Romaine lettuce, chopped
1 cup corn kernels (fresh, frozen, or canned)
1 cup Cherry tomatoes, halved
1/2 cup Shredded cheddar cheese or Mexican blend
1/2 cup Your favorite salsa (mild or spicy)
1/4 cup Red onion, finely diced
Optional: Sliced jalapeños, avocado, or a dollop of Greek yogurt.

Instructions 

1. Heat the Rice
Gently squeeze the Eat Regal Whole Grain Brown Rice pouch to loosen the grains. Tear the top open about an inch and microwave for 90 seconds. Let it cool slightly while you prep the veggies.
2. Mix the Base
In a large mixing bowl, combine the chopped romaine lettuce, black beans, corn, cherry tomatoes, and red onion.
3. Build the Salad
Add the warm brown rice to the vegetable mixture. The slight warmth of the rice helps soften the lettuce just enough and brings out the aroma of the whole grains.
4. Toss and Garnish2
Fold in the shredded cheese and salsa. To prepare, toss all the ingredients together until they are evenly coated. For an extra burst of flavor, top the dish with fresh avocado slices or jalapeños.
