Ingredients

  • 2 pouches Eat Regal Ready-to-Eat Thai Jasmine Rice

  • 1 can (15 oz) Red kidney beans or black beans, rinsed and drained

  • 1 cup Cherry tomatoes, halved

  • 1 ripe avocado, chopped

  • 1/2 cup Red onion, finely diced

  • 2 cloves Garlic, minced

  • 1 tbsp Tomato paste

  • Spices: 2 tsp chili powder, 2 tsp cumin, salt, and pepper.

  • 1/4 cup Sour cream (or Greek yogurt for extra protein)

  • 1 tbsp adobo sauce (from canned chipotles)

  • 1 tbsp Lime juice

  • Garnish: Fresh cilantro and lime wedges.

 

Instructions

1. Sauté the Bean Base

Heat 1 tablespoon of oil in a skillet over medium heat. Cook the onion and garlic over medium heat for 3 minutes until softened. Stir in the chili powder, cumin, and tomato paste. Add the kidney beans and a splash of water, cooking for 2 minutes until the beans are well-coated and warm.

2. Heat the Jasmine Rice

Squeeze the Eat Regal Jasmine Rice pouch to break up the grains. Tear open the corner to vent. Microwave for 1.5 minutes. You’ll get 8g of plant-based protein per pouch with zero added sodium!

3. Whisk the Dressing

Combine the sour cream, adobo sauce, and lime juice in a small bowl, whisking until smooth. For added heat, stir in a finely chopped chipotle pepper.

4. Assemble and Serve

Scoop the fluffy jasmine rice into bowls. Top with the seasoned beans, fresh avocado, and tomatoes. Drizzle generously with the creamy chipotle dressing and garnish with cilantro.
