Tex-Mex Stuffed Peppers

A protein-packed power bowl for a hearty, nutritious meal anytime.
Ingredients:
- 1 pouch Eat Regal Mexican Style Rice
- 2 large bell peppers, halved and deseeded
- ¼ cup black beans
- ¼ cup shredded cheddar cheese
- 2 tbsp salsa
- 1 tbsp olive oil
Instructions:
- 1 Preheat oven to 375°F.
- 2 Microwave Mexican Rice for 90 seconds.
- 3 Mix rice, beans, and salsa. Stuff into pepper halves.
- 4 Top with cheese and bake for 10 mins.
Nutrition (per serving): ~420 kcal, 14g protein, 12g fat, 60g carbs
Serving Suggestion: Serve with sour cream or avocado.
