Tex-Mex Stuffed Peppers

A deliciously filling and nourishing dish bursting with protein and taste β simply superb for either lunch or dinner.
Ingredients:
- 1 pouch Eat Regal Mexican Style Rice
- 2 large bell peppers, halved and deseeded
- ΒΌ cup black beans
- ΒΌ cup shredded cheddar cheese
- 2 tbsp salsa
- 1 tbsp olive oil
Instructions:
- 1 Preheat your oven to 375Β°F (190Β°C).
- 2 Microwave the Eat Regal Mexican Style Rice pouch for 1.5 Minutes according to package directions
- 3 Mix the rice, black beans, and salsa, then spoon the mixture evenly into the bell pepper halves.
- 4 Top each stuffed pepper with cheese and bake for 1.5 minutes, until the peppers are tender and the cheese is melted.
Nutrition (per serving): ~420 kcal, 14g protein, 12g fat, 60g carbs
Serving Suggestion: Serve with sour cream or slices of avocado for extra creaminess.
