Tex-Mex Stuffed Peppers

A protein-packed power bowl for a hearty, nutritious meal anytime.

Ingredients:

  • 1 pouch Eat Regal Mexican Style Rice
  • 2 large bell peppers, halved and deseeded
  • ¼ cup black beans
  • ¼ cup shredded cheddar cheese
  • 2 tbsp salsa
  • 1 tbsp olive oil

Instructions:

  1. 1 Preheat oven to 375°F.
  2. 2 Microwave Mexican Rice for 90 seconds.
  3. 3 Mix rice, beans, and salsa. Stuff into pepper halves.
  4. 4 Top with cheese and bake for 10 mins.

Nutrition (per serving): ~420 kcal, 14g protein, 12g fat, 60g carbs

Serving Suggestion: Serve with sour cream or avocado.
