A sizzling fajita bowl loaded with colorful veggies and Mexican-style rice.
Ingredients:
- 1 pouch Eat Regal Mexican Style Rice
- ½ cup sliced bell peppers & onions
- ¼ cup grilled steak or tofu
- 1 tbsp fajita seasoning
- 1 tbsp olive oil
Instructions:
- 1 Sauté peppers and onions in oil with seasoning.
- 2 Add steak/tofu. Cook through.
- 3 Heat rice and mix all together in bowl.
Nutrition (per serving): ~470 kcal, 18g protein, 14g fat, 60g carbs
Serving Suggestion: Serve with sour cream and jalapeños.
