Quinoa Veggie Wraps

Healthy vegetarian wraps loaded with brown rice, quinoa, and crunchy veggies.

Ingredients:

  • 1 pouch Eat Regal Brown Rice with Quinoa
  • 2 whole wheat tortillas
  • ¼ cup shredded lettuce
  • ¼ cup julienned carrots
  • 2 tbsp hummus
  • 1 tbsp hot sauce (optional)

Instructions:

  1. 1 Microwave rice for 90 seconds.
  2. 2 Spread hummus on tortillas. Add rice, lettuce, carrots, and hot sauce.
  3. 3 Roll into wraps. Slice and serve.

Nutrition (per serving): ~390 kcal, 9g protein, 8g fat, 60g carbs

Serving Suggestion: Serve with Greek yogurt dip.
